Mother Knows Best
When I first made it big in show business, I wanted to show off my fancy home to my mother. It was a sprawling Mediterranean house with a wild gourmet kitchen that had everything - and electric blender, electric toaster, electric coffeemake, electric microwave oven, electric everything.
Anxiously I showed my mother around to whet her appetite and then, the piece de resistance, the electric kitchen.
"What do you think, Ma?"
"That's very nice," she said.
The next day I got a big box with a lot of Manischewitz canned goods and a manually operated can opener. Inside I found a note. It said, "In case, darling, you should blow a fuse."
INGREDIENTS
1 can matjes herring fillets (5-1/2 ounces), bite size
1 large sweet onion, sliced thinly and separated into rings
1/4 pound Greek olives (maslines)
1 small head cabbage, finely shredded
1 large green pepper, seeded and sliced into thin rings
2 or 3 tomatoes, diced or cut into eighths
3 tablespoons olive oil
2 tablespoons wine vinegar or lemon juice to taste
Salt and fresh ground pepper to taste
1/2 teaspoon powdered sugar, optional
Combine matjes herring, onion slices, Greek olives, shredded cabbage, green pepper rings and diced tomatoes. Toss with olive oil, wine vinegar or lemon juice. Season with salt, pepper and powdered sugar (if used.) Allow to marinate in refrigerator for several hours. Toss a few times while marinating.
Serves 6 for lunch
