Cobbled Peach, Nectarine or Apricot Cake




This recipe is from "Top Nosh"

INGREDIENTS

1 stick butter, melted
1 cup all-purpose flour
3/4 cup sugar
3 teaspoons baking powder
1 cup milk
1 teaspoon vanilla
2 pounds ripe peaches (8), nectarines (8) or apricots (14)
2 tablespoons sugar and 1 teaspoon ground cinnamon, mixed

Preheat oven to 375 degrees. Butter a 9 x 13-inch baking pan. Swirl butter around to cover the bottom of the pan completely.

Place dry ingredients in a mixing bowl and slowly stir in the milk to make a smooth batter. Add vanilla.

Pour batter into the prepared pan. Spread evenly with a spatula.

Peel and slice the peaches, nectarines or apricots and arrange on top in a pleasing pattern. Sprinkle evenly with cinnamon-sugar.

Bake the cake for 40 minutes or until the top is a deep golden brown.

NOTE: Best served warm while nice and puffy with or without whipped cream or ice cream.
