Chocolate Mousse Cake (Passover)

INGREDIENTS

BASE

7 eggs, separated
3/4 cup sugar
1/2 cup cocoa, sifted

Preheat oven to 325 degrees. Use a 9 or 10-inch springform pan (ungreased).

Beat egg yolks until light. Add sugar slowly, beating constantly. Add cocoa and combine well. Beat egg whites until stiff. Fold chocolate mixture into whites. Pour into pan and bake 45 minutes. Meanwhile, prepare filling.

FILLING

1/2 pound semisweet chocolate
4 eggs, separated
1/2 cup strong coffee, cooled
1/2 cup ground nuts

Melt and cool chocolate. Beat egg yolks and slowly add to chocolate. Stir in coffee and nuts. Beat egg whites until stiff and slowly fold chocolate mixture into beaten egg whites. When cake cools and center sinks, add filling mixture. Refrigerate until ready to serve.
