Carrot Tsimmes

INGREDIENTS
2 pounds meat (brust, flanken or brisket)
1 bay leaf
Water
2 tablespoons chopped onion
1 carrot
2 large or 4 small sweet potatoes
1 tablespoon honey
1/4 teaspoon ground ginger
2 teaspoons arrowroot starch
Cold water
Sea salt to taste, optionalPlace the meat and bay leaf in a large pot and cover with water. Bring to a boil on top of the stove; add the onion. Cook over medium heat for 40 minutes.
Scrub the carrots and sweet potatoes and dice into fairly large pieces. Place the vegetables over the meat; add the honey and ginger. Add more water to cover about an inch over all ingredients. Simmer for 1 hour or until meat is tender.
Mix the arrowroot with a little cold water until smooth, then add a bit of the tsimmes water. Add this to the pot.
Taste to check for seasoning. Add salt if desired. Cook gently another 10 minutes.
