Bran Muffins

This recipe is from "Top Nosh" - and was submitted by Lillian Dubow

INGREDIENTS

1 cup brown sugar
1 egg, lightly beaten
1 cup sour cream, mashed banana or applesauce
1/2 cup oil
1 teaspoon vanilla
1 cup flour, white or whole wheat
1 cup bran
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup raisins and/or sunflower seeds

Preheat oven to 350 degrees. Grease or line with paper baking cups in 12-cup muffin pan.

Mix all ingredients. Fill muffin cups 2/3 full and bake 25 minutes or until cake tester is dry.
