Apple Cake

INGREDIENTS

1 (20-ounce) can apple pie slices
3 eggs
2 cups sugar
1 cup oil
2 teaspoon vanilla
1 teaspoon almond extract
3 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
Confectioners' sugar

Preheat oven to 350 degrees. Grease and flour 10-inch Bundt pan.

Drain and rinse apples and set aside.

Cream eggs, sugar, oil and extracts. Mix together flour, baking soda, cinnamon and salt.

Add 2/3 flour mixture to egg mixture and blend well. Coat apples with remainder of flour mixture. Add to egg mixture and mix by hand until thoroughly blended. Pour into prepared pan and bake 1 hour or until cake tests done. When cake has cooled, remove from pan and sprinkle with confectioners' sugar.
