Amaretto Cheesecake

INGREDIENTS

CRUST

1/3 cup butter or margarine, melted
1-1/4 cups graham cracker crumbs
1/4 cup sugar

Preheat oven to 375 degrees. Use a 9-inch springform pan. Combine all ingredients, mix well and pat firm into bottom of springform pan.

CAKE

1-1/2 pounds cream cheese, room temperature
1/2 cup sugar
2 teaspoons lemon juice
1/2 teaspoon vanilla
1 teaspoon almond extract
2 tablespoons Amaretto liqueur
3 eggs

In large bowl of mixer, beat cream cheese until light and fluffy. Beat in remaining ingredients. Pour into crust and bake 45 to 50 minutes. Cool 5 minutes. Reduce oven temperature to 350 degrees. Meanwhile, prepare topping.

TOPPING

1 (8-ounce) container sour cream
2 tablespoons Amaretto liqueur
1 tablespoon brown sugar
1/2 cup toasted, slivered almonds, optional

Combine first 3 ingredients. Spoon onto cheesecake and bake at 350 degrees for 20 minutes. Sprinkle with almonds. Refrigerate at least 4 hours.
