Almond Corn Muffins

INGREDIENTS
1/2 cup sliced almonds
1 cup white corn meal
1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup sugar
1 teaspoon baking powder
1 egg
3 tablespoons melted margarine
1 cup buttermilk
1/2 teaspoon almond extractPreheat oven to 400 degrees. Grease 12-cup muffin tin.
Briefly whirl almonds in blender or processor until partially chopped. Combine almonds with dry ingredients and set aside.
Combine remaining ingredients and add to flour mixture, stirring briefly, just until dry ingredients are incorporated.
Fill muffin cups and bake 15 to 20 minutes or until toothpick comes out clean. Cool in pan 5 minutes before removing.
