Cheese and Tomato Fans (Mozzarella All'Origano)

Mozzarella combines perfectly with sun-ripened flavorsome tomatoes for a light summer appetizer.
INGREDIENTS
2 very large ripe tomatoes
2 Mozzarella cheeses
5 tablespoons olive oil
Salt
Freshly ground black pepper
Oregano
A few basil leavesWash and dry the tomatoes and place stalk end downward; slice vertically, leaving the slices attached at the base, into a fan shape.
Place a slice of Mozzarella inside each opening in the tomato fan. Dress with oil, salt, pepper, oregano, and decorate with basil leaves.
