Baby Carrots in Marsala Wine

Marsala wine adds a tasty sweetness to baby carrots. This would make a great vegetable side dish for roasted or grilled meats.
INGREDIENTS
1/4 cup unsalted butter 1 pound washed baby carrots 1/4 cup Marsala wine Salt and pepper, to taste
Precook the carrots in boiling, salted water until they are just about completely cooked, but still a bit firm.
Melt the butter together with the Marsala wine and cook until bubbly. Add the carrots and cook over high heat until the mixture thickens and the carrots are well coated, about 3 minutes. Season with salt and pepper and serve.
Makes 4 servings
