Black Olives in Anchovy Dressing (Olive Nere All'Acciuga)

INGREDIENTS

14-ounces firm black olives
Scant 1 cup olive oil
1/2 onion, finely chopped
4 anchovy fillets
Oregano

Pit the olives with the appropriate utensil, keeping them neat as possible.

Sauté the onion, garlic, anchovy fillets and oregano in the olive oil for 5 minutes over moderate heat, then pour the flavored oil through a sieve on to the pitted olives.
