INGREDIENTS

2 cups basmati rice, white or brown, cooked according to package instructions
1/2 cup grated Parmesan cheese
1 tablespoon dry basil or 1 bunch fresh, chopped
1/2 teaspoon pepper
1/2 teaspoon salt, optional
2 cloves garlic, minced (or to taste)
4 ounces black olives, drained
3/4 cup sun-dried tomatoes, rehydrated and chopped
1 tablespoon olive oil, optional

Put cooked basmati into large mixing bowl. Toss hot rice with remaining ingredients using wooden spoons to avoid breaking grains.

Serve immediately.
