Baked Olives (Olive Al Forno)

Pancetta is an Italian bacon, usually sliced very thinly.

INGREDIENTS

24 very large green olives
24 thin slices smoked pancetta
Olive oil

Allowing a few extra for mistakes, pit 24 extremely large, perfect olives, keeping them neat. Wrap each olive in a slice of pancetta. Thread on cocktail sticks, in pairs, and place on a lightly oiled cookie sheet.

Heat in a moderate oven until the pancetta fat starts to melt. Place briefly on kitchen paper towels to absorb excess fat and serve on a hot plate. Remove the cocktail picks, if desired.

Makes 4 servings
