Boxty 2 (Potato Griddle Cakes)

INGREDIENTS 1 cup raw, grated potatoes
1 cup all-purpose flour
2 teaspoons salt
2 teaspoons baking powder
1 cup leftover mashed potatoes
2 eggs, lightly beaten
1/4 cup milk to mix, about
1 tablespoon butterSqueeze the grated raw potatoes in a cloth to remove as much moisture as possible. Sift the flour with the salt and baking powder.
Mix all potatoes with the dry ingredients and add the beaten eggs. Mix well, and add sufficient milk to make a batter that will drop easily from a spoon.
Melt the butter in a frying pan. Drop the batter by tablespoons onto hot buttered frying pan and cook over moderate heat until browned, about 4 minutes per side.
Serve hot with a sprinkling of sugar, with applesauce, or with fried eggs. Also good served buttered as a side dish.
