Use firm, crisp apples such as Stayman, Golden Delicious, Rome. If apples lack tartness, use additional ¼ cup of lemon juice for each 6 quarts of sliced apples.
Wash, peel and core apples. Cut apples into slices, ½-inch wide. Place in *anti-darkening solution of 1 teaspoon ascorbic acid per gallon water or use an ascorbic acid mixture following label directions.
Remove from antidarkening solution and drain well. To blanch fruit, place 6 cups at a time in one gallon of boiling water. Boil each batch for one minute after the water returns to a boil. Remove fruit from blanch water, but keep the hot fruit in a covered bowl or pot while the ClearJel® mixture is prepared.
Combine sugar, ClearJel®, cinnamon and nutmeg in a large saucepot with water, apple juice and food coloring. Stir and cook on medium high heat until mixture thickens and begins to bubble. Add lemon juice to the boiling mixture and boil 1 minute, stirring constantly. Immediately fold in drained apple slices and fill hot jars with hot mixture. Leave 1-inch headspace. Remove air bubbles. Wipe jar rims. Adjust lids and process immediately in a boiling water bath for 25 minutes (pints and quarts).
NOTES: There are about 3 cups in 1 pound ClearJel®. USDA fruit pie filling recipes like the one for apple below take about 1-½ to 2-¼ cups per 6-7 quarts of pie filling.
Each canned quart makes one 8 to 9-inch pie. Because the variety of fruit may alter the flavor of the pie, can a trial quart and taste it. Then adjust the sugar and spices in the recipe to suit personal preferences. The amount of lemon juice should not be reduced because it helps with the safety and storage stability.
Anti-darkening solution: - Fruit Fresh is a commercial anti-darkening solution that can be purchased at the supermarket. Or 1/4 cup lemon juice to 1 gallon of water can be used as anti-darkening solution.
