Okra and Corn Bowl

2 slices bacon
1/2 cup chopped red or green sweet pepper
1/4 cup chopped green onions
1 (16-ounce) bag frozen sliced okra*
2 cups frozen whole kernel corn
1/2 cup chopped tomatoes
1/2 teaspoon salt
1/4 teaspoon pepper
In large skillet cook bacon until crisp. Drain bacon on paper towels, reserving 1 tablespoon drippings in skillet. Crumble bacon and set aside.
Cook sweet pepper and green onions in reserved drippings, over medium heat for 3 to 5 minutes, or until tender. Stir in okra, corn, tomatoes, salt and pepper. Cook and stir over medium heat about 5 minutes or until okra and corn are tender. Stir in bacon.
Makes 8 servings
NOTE - If you can't get frozen sliced okra, thaw whole okra just enough to slice easily (about 15 minutes). Slice it into 1/2-inch pieces.
