Apple Kugel

INGREDIENTS 8 ounces medium egg noodles
1/4 cup melted margarine or oil
4 eggs, beaten
3 medium apples
1/4 cup dark seedless raisins
1/4 cup sugar
1-1/2 teapsoons salt
2 teaspoons cinnamon
1/2 teaspoon vanillaCook and drain noodles and put in a large bowl. Stir in margarine and eggs.
Peel and chop apples. If using raisins, rinse in hot water and drain.
Combine all ingredients together, add seasoning and mix well. Preheat oven to 350 degrees.
Pour kugel mixture into a greased 9 x 13-inch baking pan. Bake for 40 to 60 minutes or until lightly browned.
Makes 12 servings
NOTE - For extra softness, add another 2 eggs.
VARIATION - PINEAPPLE KUGEL - Replace apples and raisins with one 16-ounce can crushed pineapple. Add an additional 1/2 to 3/4 cup of sugar and 1 tablespoon cinnamon.
