Irish Braised Celery

INGREDIENTS

1 head celery
1 medium onion
2 slices bacon, optional
½ pint vegetable stock
1-ounce butter
1 teaspoon chopped parsley
Salt and Black Pepper

Pre-heat the oven to 325 degrees.

Clean celery, cut into one-inch pieces and place in a casserole dish.

Finely chop bacon, parsley and onion and sprinkle over celery, seasoning to taste. Pour over the stock. Dot with knobs of butter.

Cover dish and bake for 30-45 minutes.
