Green Beans

INGREDIENTS

4 cans of cut green beans, drained
1 tablespoon of Cajun Seasoning, or to taste
1 pound of bacon, *see note
1 small onion, chopped
2 tablespoons butter or margarine
A couple of small potatoes, cubed, optional*

Fry bacon until crispy. (*You can substitute smoked sausage, sliced.) In that case, fry down and simmer until tender.

Remove all the excess grease but approximately 2 tablespoons. Add chopped onion, seasoning, green beans, and margarine. Stir well and often to prevent scortching. Simmer over low heat until beans have reached desired consistency. (* If you choose to add potatoes, do so towards the end of cooking time to ensure that the cubes will not fall apart).
