INGREDIENTS

2 cups cooked rice
3 eggs, beaten
1/2 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon vanilla extract
2-1/4 teaspoons baking powder
1/2 to 1 cup flour
Oil for deep frying
Powdered sugar

In a large bowl, combine rice, eggs, sugar, cinnamon, nutmeg, vanilla and baking powder. Add just enough flour to hold batter together.

Heat oil in the deep fryer to 365 degrees. Drop batter by teaspoonfuls into hot oil. Fry in batches until crisp and golden, about 7 minutes. Drain on paper towels and sprinkle generously with powdered sugar.
