Cajun Beef Soup

INGREDIENTS

8 quart stock pot
2 to 3 quarts water
1 (16-ounce) can whole kernel corn, undrained
1 (16-ounce) can corn, undrained
1 (16-ounce) can carrots, undrained
1 (16-ounce) can cut green beans, undrained
3 to 4 (16-ounce) cans of tomato sauce
2 (16-ounce) cans of sliced new potatoes, undrained
1 (16-ounce) can of beans, your choice (I use kidney beans)
1 (10-ounce) can of diced tomatoes and green chilies
1 large onion, chopped
1 cup celery, chopped
1 large bell pepper, chopped
2 tablespoons minced or chopped garlic
Cajun seasoning to taste
2 pounds beef stew meat

Brown stew meat with seasonings, add onions, garlic, celery, and bell peppers. Simmer until meat is almost fork tender.

Add remaining ingredients and simmer until meat is tender. Stir often to prevent scortching.

NOTE - Please note that the addition of water varies, it depends on how thick you desire the soup to be.
