Black Bean Soup

INGREDIENTS

1 pound black beans
2 onions, chopped
2 bell peppers, chopped
1 tablespoon cumin
1 teaspoon oregano
1 bay leaf
½ teaspoon pepper
2 teaspoons salt
½ cup olive oil
2 quarts water

Wash beans and soak overnight. The next day, boil the beans in the same water. Add remaining ingredients. Cover. Cook slowly about 1½ hours. Serve over white rice with chopped onion and vinegar.
