Roasted Potatoes 2

These potatoes are made in a pan on top of the stove like my Grams used to do. However, it can easily be adjusted to oven-roasting. See Roasted Potatoes 1 or Roasted New Potatoes.
INGREDIENTS
2 pounds small red-skinned potatoes, of fairly equal size
4 tablespoons butter
Salt and pepper, to taste
Parsley and paprika, for garnishWash potatoes and peel, if desired. Heat butter in a large heavy skillet over medium heat. Add potatoes, lower heat and cover. Sauté, adjusting heat as needed, stirring occasionally, until fork tender. Serve immediately.
