Buttered Lima Beans and Corn

If the lima beans and corn are not fresh, the frozen varieties are very good, and is why I am using it. This recipe is quick and easy, and goes well with roasted meats or poultry. If fresh are available, adjust your cooking time.

INGREDIENTS

1 cup water
1 bag (20-ounces) frozen lima beans
1-1/2 cups frozen corn kernels
2 to 3 tablespoons butter
Salt and pepper, to taste

Bring lightly salted water to a boil in a medium saucepan. Add lima beans. Cover, reduce heat to medium-low, and cook until tender, about 20 minutes. Add the corn and cook another 5 minutes. Drain well. Add the butter, salt and pepper, and stir over low heat until butter is melted. Taste for seasoning and keep warm until serving..
