INGREDIENTS
2 pounds beef round steak, cut into 1-inch cubes
3/4 cup pineapple juice
1/4 cup oil
3 tablespoons soy sauce
2 teaspoons brown sugar
3/4 teaspoon ground ginger
1 garlic clove, finely chopped
2 medium-sized green peppers, halved, seeded, deribbed and cut into 1-inch squares
18 mushroom caps
18 pearl onions
18 cherry tomatoesCombine the pineapple juice, oil, soy sauce, brown sugar, ginger and garlic. Marninate the meat in this mixture overnight in the refrigerator. Drain the meat, reserving the marinade.
Thread the meat cubes onto skewers alternately with the squares of green pepper, the mushroom caps, the pearl onions and the cherry tomatoes. Grill over charcoal for 10 to 15 minutes, basting frequently with the reserved marinade.
