Senate Salad

INGREDIENTS

2 cups lettuce, torn into bite-size pieces
2 cups romaine, torn into bite-size pieces
1 cup watercress, torn into bite-size pieces
3 cups diced, cooked chicken*
2 cups diced celery
1/2 cup chopped green onions and some green parts
4 medium tomatoes, cubed
2 medium avocados, peeled and cubed
10 large, stuffed olives, sliced
Sections from 1 grapefruit
1/2 cup julienne-cut cooked chicken

Combine all the ingredients, reserving the julienne of chicken as garnish. Toss with Senate Salad Dressing.

Makes 8 servings

*NOTE - Lobster could be used instead of chicken.

SENATE SALAD DRESSING

6 teaspoons chopped chives
6 hard-cooked eggs, chopped
1 cup olive oil
1 cup mayonnaise
1 cup vinegar
Chopped garlic, optional

Combine olive oil and vinegar. Add remaining ingredients. Blend well.
