Green Beans Amandine

Although the Green Bean Bake of the 50's with its sauce of cream of mushroom soup was still popular in the 60's, green beans with almonds was preferred by gourmets. From Fashionable Food.

INGREDIENTS

3 cups green beans, snapped, strings removed (fresh) (Or frozen)
2 tablespoons butter
1/2 cup sliced almonds

Cook the green beans in boiling salted water until tender but still lightly crisp. Drain.

Melt the butter in a medium skillet; add the almonds and toast them slightly over low heat, being careful not to burn.

Add the beans to the butter and almonds and toss them to coat.

Serves 6
