Greek Potatoes with Tomato Sauce (Patates Yahni)

If you find the use of the word "Yahni" in Greek cooking, it means that you will find a dish rich with tomatoes.
INGREDIENTS
2 pounds tomatoes, peeled and cut into big chunks
1 onion, coarsely chopped
2 garlic cloves, minced
1/2 cup extra-virgin olive oil
1 pound tomatoes, puréed or finely chopped
1 tablespoon fresh lemon juice
Salt and freshly ground black pepper, to tasteIn a pan large enough to hold all the ingredients, heat the olive oil over medium heat. Stir in the onions and sauté until transparent. Add the garlic and sauté for a few seconds.
Stir in the remaining ingredients, bring to a boil and simmer for about 30 minutes, or until the potatoes are tender. (If the sauce begins to stick add a little water, but not too much as the resulting sauce should be thick and oily.
Makes 4 servings
