Spinach Pie (Spanakopita)

INGREDIENTS

1 bunch dill, diced
2 whole eggs
1 pound Feta cheese
1 pound phyllo pastry
2/3 pound green onions, sliced
1 whole leek, cleaned thoroughly, chopped
1/2 cup olive oil
Pepper, to taste
Salt, to taste
2 pounds spinach

Clean and boil the spinach lightly. Strain it well and chop it.

Brown the green onions and leek lightly in a pot, using 1/2 of the olive oil. Remove from the heat and add the dill, egg, spinach, salt and pepper.

Oil a baking pan and spread half the sheets of phyllo pastry. Spread the spinach mixture on top and sprinkle with the feta cheese and cover with the remaining phyllo pastry.

Brush the top with oil and bake in a 350 degree oven for about 1 hour.
