Sausage with Tomatoes and Red Peppers (Spetzofai)

INGREDIENTS

1 clove garlic, crushed
2 to 3 tablespoons olive oil
2 medium onions, sliced
2 whole red bell peppers, seeded and diced
2-1/4 pounds sausages, sliced or left whole
1 to 2 medium tomatoes, finely chopped

Preheat the olive oil. Add the onions and fry until transparent. Add the garlic, sausages, tomatoes and red peppers; cook for 15 to 20 minutes, until sausages are cooked through. Serve hot.
