Potato Balls (Patatokeftedes)

INGREDIENTS

2 to 3 eggs, beaten
3 to 4 teaspoons Feta cheese, grated
4-ounces flour
Pinch of mint, to taste
Oil
Parsley, to taste
Pepper, to taste
2-1/4 pounds potatoes
Salt, to taste

Boil the potatoes in salted water until tender. Drain and mash the potatoes. Add the eggs, feta, salt, pepper, mint and parsley. Mix well and form into small balls.

Roll the balls in the flour and fry in hot oil. Turn and continue frying until browned. Drain well on paper towels and serve hot.
