Chickpea Balls (Revithikeftedes)

INGREDIENTS

2-1/4 pounds chickpeas
2 eggs, beaten
1/2 cup flour
1 medium onion, finely chopped
1 teaspoon oregano
Pepper, to taste
2-1/4 cups potatoes, mashed
Salt, to taste

Soak the chickpeas overnight. Boil chickpeas for 40 minutes; drain and mash.

Add the mashed potatoes, beaten eggs, onion, 4 to 5 tablespoons flour and seasonings. Mix the ingredients well and form into balls.

Roll the balls in remaining flour and fry in a little oil, turning until browned. Drain on paper towels and serve hot.
