Sweet and Sour Red Cabbage

This recipe goes well with Pork Roast.

INGREDIENTS

1 large red cabbage
1 large apple, peeled, cored, and diced
Handful of raisins, dark or golden
Bacon grease, to taste
Salt
Vinegar

Wash cabbage and cut into quarters and cut again.

Place cabbage in a large pan, add water and bring to a boil; reduce heat. When cabbage is somewhat boiled down, add a little vinegar, this keeps the color in the cabbage. Add diced apples, raisins, and bacon grease. Reduce heat to low, simmer until cabbage is very tender; there should not be a lot of liquid in the cabbage.
