Christmas Pepper Relish

This recipe gets its name from the mixed red and green peppers which makes it very festive.

INGREDIENTS

3 cups vinegar
4 even tablespoons salt
2 cups sugar
1 dozen red peppers
1 dozen green peppers
1 dozen large onions
3 stalks celery, not bunches

Chop the peppers, onion, and celery by hand or put through a food chopper. Mix all together. Pour boiling water over and let stand 5 minutes, then drain.

Put vinegar, salt, and sugar in a large kettle and heat. When hot, add vegetables. Let come to a boil, then put in clean, sterilized jars and seal securely.
