Meat and Cabbage

INGREDIENTS

1 pound lean ground beef
1/3 cup uncooked rice
2 tablespoons butter
1 onion, finely diced
1 egg, well beaten
1 cup tomato soup
Juice of 1 lemon
1 teaspoon sugar
1 teaspoon minced parsley
1/2 cup celery, chopped
Salt and pepper, to taste
8 cabbage leaves

Season the ground beef well with salt and pepper; add the egg and mix well. Mix in the rice.

Make the sauce: Melt the butter and add the tomato soup and an equal amount of water, stir, then add onion, parsley, celery, lemon juice, sugar, salt and pepper; cook for about 10 minutes. Adjust seasonings.

Wash the cabbage leaves and boil until just tender enough to handle easily. Put 2 tablespoons of meat mixture in each leaf and roll tightly. Secure with toothpick. Place in saucepan and pour sauce over rolls.

Cover pan tightly and cook slowly for 3 hours. Serve very hot.
