Little, spicy honey-flavored bars called "Lebkuchen" are easy to make and very tasty. My friend Marcy gave this recipe to me.
INGREDIENTS
5 cups all-purpose flour
1/2 teaspoon baking powder
3/4 cup chopped almonds
2 cups clear honey
1/2 teaspoons powdered cloves
1/2 teaspoon cinnamon
1 cup mixed candied fruit
2 tablespoons chopped glacé cherriesICING
2 egg whites
1-1/2 cups confectioners' sugar
1 tablespoon lemon juicePreheat oven to 350 degrees.
Mix all the ingredients, except the honey, together in a large dish. Heat the honey until it thins; but do not boil.
Add to dry ingredients and knead well until smooth. Roll out dough to a thickness of 1/2-inch and place on a greased, floured baking tray.
Bake in preheated 350 degree oven for 20 to 25 minutes.
While Lebkuchen is baking, prepare a glacé icing. Whip egg whites until soft peaks have formed. Add sugar and lemon juice. Beat until thick, smooth and glossy.
Spread icing on Lebkuchen while it is still hot, then cut into rectangles.
