Caramel Turnips

This sweet-sour turnip dish is a great accompaniment to Christmas meats as well.

INGREDIENTS

3 dried plums
1-1/2 pounds turnips, peeled
1 tablespoon butter
Salt and pepper, to taste
1/2 cup parsley, coarsely chopped
3-ounces sugar
1/2 cup vegetable broth
4 tablespoons white wine vinegar
1 tablespoon butter

Soak plums in lukewarm water until partially softened, about 15 minutes. When soft, drain, pat dry, and season with mustard, salt and pepper. Set aside.

Steam turnips for about 15 minutes or until soft. Drain and let dry. (Turnips should be very dry).

TO MAKE CARAMEL - Put sugar, broth and vinegar in a saucepan over medium heat, stirring with wooden spoon until sugar is melted. Boil 3 to 4 minutes, or until syrup turns a light brown.

Put in turnips, reduce heat to low, and simmer 5 minutes. Add butter. Turn into serving bowl and garnish with parsley, if desired.

Makes 6 to 8 servings as a side dish
