Brussels Sprouts in Beer (Rosenkohl in Bier Gedunstet)

Even people who don't ordinarily like this cabbage-like vegetable, will enjoy these sprouts that have mellowed in a good beer or ale.
INGREDIENTS
1 pound Brussels sprouts
Beer to cover, about 1 to 2 pints
Salt and pepper, to taste
2 tablespoons butterTrim and wash sprouts. Place in a medium-size saucepan and pour enough beer over them to cover.
Bring to a boil. As soon as beer begins to boil, reduce heat and simmer gently, covered, for 20 minutes or until fork tender. Add more beer if liquid evaporates. Drain and add salt, pepper and butter.
Serves 6 to 8 as a side dish
