Chocolate Filling

INGREDIENTS

4 ounces cooking chocolate
1/2 cup sugar
4 tablespoons hot water
3/4 cup boiling water
1/2 cup light cream
1/2 cup sugar
1 teaspoon vanilla
1 egg white, beaten

Scrape 4 ounces of cooking chocolate and combine with 1/2 cup of sugar. Place in a small sauce pan and stir in 4 tablespoons of hot water. Stir until the chocolate and the sugar dissolve and until the mixture is smooth and shiny.

Add 3/4 cup of boiling water, 1/2 cup of light cream, and 1/2 cup of sugar. Stir until the sugar dissolves. Continue to stir over heat until the mixture comes to a boil.

When the mixture boils add 1 teaspoon of vanilla and the beaten white of 1 egg. Cook until it thickens. Pour into a small bowl and cool until ready to spread between the layers of a cake.
