7-Minute Mocha Frosting

INGREDIENTS

2 egg whites, unbeaten
1-1/2 cups sugar
1/8 teaspoon salt
1/3 cup water
2 teaspoons light corn syrup
2 teaspoons instant coffee
1 teaspoon vanilla

Combine egg whites, sugar, salt, water, corn syrup, and coffee in the top of a double boiler. Beat with rotary or electric beater for 1 minute or until completely mixed.

Cook over rapidly boiling water, beating constantly for 7 minutes if a rotary beater is used, or until frosting will stand up in peaks. Stir frosting up from the bottom and sides occasionally while heating.

If electric beater is used over double boiler, only 2 minutes of beating time is needed. Remove from heat and add vanilla.
