7-Minute Fat-Free Frosting

INGREDIENTS

1 cup sugar
1/3 cup water
1/4 teaspoon cream of tartar
Salt
2 egg whites, unbeaten
1 teaspoon vanilla

Combine sugar, water, cream of tartar and salt in saucepan. Bring to boiling, stirring until sugar dissolves.

Very slowly, add sugar syrup to egg whites in a bowl. Beat constantly with hand mixer until stiff peaks form; add vanilla.

Will frost top and sides of two 8 to 9-inch layers or one 10-inch tube or whole cake.
