Rosemary and Garlic Coated Pork Tenderloin

INGREDIENTS

1 (1-pound) pork tenderloin
2 tablespoons finely chopped rosemary
4 garlic cloves, pressed
1/2 teaspoon salt
1/4 teaspoon pepper
Olive oil

Preheat oven to 475 degrees. Line a rimmed baking sheet with foil and brush very lightly with olive oil.

Mix the garlic and rosemary together. Make several 1/2-inch slits in the pork and lace half of the rosemary/garlic mixture into the slits.

Coat the pork with the other half of the mixture and place on the prepared sheet.

Bake for about 20 minutes or until desired degree of doneness. Let stand for 5 minutes. Slice into 1/4-inch slices and serve.
