INGREDIENTS

1 cup cornstarch
1 cup flour
1 teaspoon salt
3/4 cup water
1 teaspoon annatto seeds
1 pound sweet potato, grated
1/2 pound shrimp, sliced, 12 shrimp
3 tablespoons oil
3 green onions, chopped

In a bowl, combine cornstarch, flour, and salt. Soak annatto seeds in hot water for 20 minutes. Squeeze seeds to exude color, then strain and reserve liquid. Add 3/4 cup water and annatto water to starch mixture. Knead until the liquid is absorbed. Add the grated sweet potato and beat vigorously with a spoon until well combined. Heat oil in a skillet.

Spoon 2 tablespoons of batter into skillet and top with green onions and 1 shrimp. Brown on both sides. Serve with Garlic Sauce. or crush 1 tablespoon garlic with 1 teaspoon salt. Mix thoroughly with 1 cup white vinegar.
