Sweet and Sour Sauce

INGREDIENTS

1/4 cup cider vinegar
1 teaspoon soy sauce
1/2 cup sugar
1 cup pineapple juice
1/2 teaspoon fresh ginger, grated
1/2 clove garlic, crushed
2 tablespoons cornstarch
2 tablespoons cold water

Blend cornstarch with 2 tablespoons cold water. Combine vinegar, soy sauce, sugar, 1 cup pineapple juice, ginger and garlic in a small saucepan. Bring to a boil. Stir in cornstarch mixture, stirring constantly, and simmer for 5 minutes, or until thickened. Season to taste with salt, if desired. Serve warm with Lumpia.
