Shrimp with Green Beans and Coconut

INGREDIENTS 16-ounce can lite coconut milk
2 garlic cloves, crushed
8 cups green beans
2 pounds shrimp, left in shell but cut down back and deveined
1/2 teaspoon saltBring coconut milk and garlic to a simmer in a wok or a heavy skillet over medium heat. Stir until the mixture thickens to consistency of whipping cream, about 7 minutes.
Add green beans, cover and simmer for 6 minutes, stirring occasionally. Leave shrimp in shell but cut down back and devein. Add shrimp and salt to green bean mixture. Cover and simmer until shrimp turn just opaque, about 15 minutes.
Makes 12 servings
