INGREDIENTS

3 medium tomatoes, sliced
1 teaspoon fresh ginger, grated
1/8 cup mango, chopped
1 scallion, sliced
1/4 teaspoon salt
1/8 teaspoon pepper

Cut the tomatoes into 1/8-inch slices and arrange in a single layer on a platter. Sprinkle the ginger, mango, and scallion evenly over the tomatoes. Sprinkle with salt and pepper, to taste.
