INGREDIENTS

4 garlic cloves, chopped
1 medium onion, chopped
1 pound ground round beef
2 medium tomatoes, peeled and chopped
2 cups beef broth
1 teaspoon salt
1/4 teaspoon pepper
3 medium potatoes, peeled and cubed, about 1 pound
1 tablespoon oil

Heat oil and fry onion and garlic until golden. Add beef and stir until the pink is gone. Drain excess fat and add tomatoes. Cook until they are soft. Add broth, salt, and pepper and bring to a boil. Cook, covered on medium heat for 20 minutes. Add potatoes and cook 25 minutes longer, or until potatoes are done. Serve hot.
