INGREDIENTS 1 pound pork, cut into 2-inch cubes
2 teaspoons annatto seeds
1 tablespoon oil
1 tablespoon chopped garlic
1 medium onion, chopped
2 medium tomatoes, sliced
3 medium potatoes, diced
8-ounces pork liver
2 teaspoons salt
1/2 teaspoon pepperCut pork into 2-inch cubes. Fry annatto seeds in oil over low heat for 1 minute. Strain and discard seeds.
In the red oil, fry the garlic and onion until soft and golden. Add tomatoes and cook until soft and pulpy. Add pork to pan, cover, and bring to a boil. Reduce heat and simmer until pork is tender.
Add potatoes, and a little water or stock if very little liquid remains in pan. Simmer until potatoes are cooked.
Meanwhile, cup up liver very finely. Add to pan when potatoes are cooked, season to taste with salt and pepper, and bring back to a boil. Serve hot.
