Lumpia Wrappers

INGREDIENTS

2 large eggs
2 cups flour
1/8 teaspoon salt
2 cups water
2 tablespoons oil

Combine eggs, flour, salt and water in a bowl. Stir until a smooth batter is formed.

Heat an 8-inch skillet, preferably nonstick, over moderate heat. Lightly oil the pan with a piece of paper towel dipped in oil, or use a spray.

Using a ladle, pour in just enough batter to cover the bottom of the pan, about 2 tablespoons. Swirl the pan quickly to make a thin coating. Cook for a few seconds until it begins to curl away from edges of the pan. Turn over and cook the other side for a few seconds. Remove the wrapper and transfer to a lightly floured piece of wax paper. Continue this process until all of the batter is used up. Place a piece of wax paper between each wrapper.

Makes 24 wrappers

You can freeze wrappers for up to one month.
