INGREDIENTS

1-1/2 pounds shrimp
16-ounce can lite coconut milk
1 tablespoon chopped garlic
1 teaspoon fresh ginger, chopped
1 teaspoon salt
1/4 teaspoon pepper

Wash shrimp, but leave in shells. Put into a saucepan with coconut milk, garlic, ginger, salt, and pepper. Bring to a boil, stirring. Reduce heat and simmer, uncovered, for 15 minutes, stirring frequently. Serve with hot white rice.
